Important Information
- Shelf Life: Our croquembouche is made fresh on the day of your event and is best served immediately. The toffee coating will begin to break down into a liquid caramel after a day, but the profiteroles themselves will remain delicious for 3-4 days. After the event, be sure to store any remaining profiteroles in the fridge.
- Storage: Keep your croquembouche in a cool, dry place away from direct sunlight. Do not refrigerate the complete tower, as this will cause the toffee to melt. An air-conditioned room is ideal, especially during humid weather.
- Notice Required: While we can accommodate last-minute orders, we appreciate 2-3 days' notice to ensure we have enough time to craft your beautiful croquembouche.
- Delivery & Pickup: We offer delivery to most locations in Sydney, Monday to Saturday. You are also welcome to collect your order from our store 7 days a week.
- Allergens: This product contains gluten, dairy, and eggs. It may also contain traces of nuts and sesame.
- Alternative Fillings: Want to add a twist? Upon request, we can fill your profiteroles with a delicious chocolate, coffee, or mocha-flavored filling.
- Delivery: We deliver 6 days per week, Monday to Saturday and to most locations in Sydney. A croquembouche can still be collected from our store 7 days per week

This amazing croquembouche tower is made up of choux pastry puffs filled with vanilla custard with mild citrus flavours.
Other options of chocolate and coffee flavours can be made as a filling custard if required.
Each profiterole is dipped in toffee and then the tower is wrapped in caramelised sugar.
Ideally any croquembouche is best served on the day it is made and in the cooler and less humid months of the year.
Please store this cake in an air-conditioned room for safe keeping.
